Biocatalysts Ltd began life as an in-house service company based in Express Dairies, so it follows that dairy is our largest sector. For many years Biocatalysts has developed a large range of products for enzyme modified cheese (EMC) with more recently products for applications such as butter oil hydrolysis, whey protein hydrolysate production and accelerated cheese ripening. Biocatalysts NPD team are constantly developing new products in this area including new proteases with unique functional and flavour properties and microbial enzymes for halal, kosher and vegetarian markets.

As contract enzyme manufacturers we know that when developing new enzyme products for use in food processing applications it is essential to test the enzyme system under commercially-relevant conditions. At our state-of-the art facilities we reproduce many commercial processes on a small scale. In this way we quickly test novel enzyme systems to ensure they are providing the required benefits as demanded by the client. Whilst no small-scale process can truly reflect large scale production, a positive result under small scale evaluation provides confidence to move to process scale-up.
