Jollys of Orkney

Traditional fish processing has been the single most important element of the firm of 'William Jolly' over the past fifty years since it was created by William Jolly after his retirement from the sea as a lobster and line fisherman. Now his son and daughter, Billy and Liz, carry on in business using the same pickling, salting and smoking techniques that have been practiced and perfected since the firm was born half a century ago.
